New Year's Eve at Villaluenga del Rosario, a charming white village of the Sierra de Grazalema N.P., and European cheese capital 2020. The Cabalgata de los Reyes Magos (5 January) in the splendid main square of the elegant town of Medina Sidonia, near the natural parks of Barbate (Atlantic salt-marshes) and of the Alcornocales (cork-oak forests). We discover: the production of oil from wild olives, of salt from inland pans dating from the Phoenicians, of payoyo cheese; leatherwork, and Roman, mediaeval and renaissance citadels.
ONE WEEK Activities: 5 days with walks of 3-3.5 hours, on occasionally steep/stony paths (denivellation max. +300m) and varied historical and natural visits: the towns of Arcos de la Frontera, Bornos, Medina Sidonia and Ubrique; Roman remains hidden in the hills; picturesque white villages with their traditional agricultural activities. Group 8 maximum.
FULL BOARD in rooms for 2 in hotels with private bathrooms: three nights at the posada of Villaluenga del Rosario. Simple and delicious mountain gastronomy: green asparagus soup, chicken with pineseeds and raisins, payoyo cheesecake. Four nights in a converted C18 noble house at Medina Sidonia, a town known for its original and varied tapas.
FESTIVITIES Nochevieja: after the New Year's Eve dinner, rendezvous on the square of Villaluenga to eat the traditional 12 grapes and welcome in the New Year. At Medina Sidonia, procession of the Three Kings in the evening of 5 January.

THURSDAY: Transfer to Villaluenga (3 nights); discovery of its Sima and Manga, irises and narcissi.
FRIDAY: At Benaocaz: part of the Roman road from Carteia to Arunda; the Roman town of Ocuri. The Qanat (Arabic water supply) of Villaluenga. New Year's Eve.
SATURDAY: The forests and karst landscapes of the Llano del Republicano, a high plain between limestone crags, with many grazing sheep, goats, cows and black pigs.
SUNDAY: Ubrique, well known for its leather goods: the secrets of the leather museum where we can make a preciso, a small pouch to attach to the belt, much in vogue in C18. The El Callejón oil mill with its unique acebuchina and the Hortales inland salt pans, still in activity. Arrival at Medina Sidonia. During our stay we visit its castle, Roman remains, grandiose main church and ethnographical museum.
MONDAY: The Cerro de Plaza de Armas walk. Bornos, with its romantic palace and splendid vistas. The cliff-top citadel of Arcos de la Frontera.
TUESDAY: Route of the mills at Vejer de la Frontera: mediaeval watermills and aqueduct of Santa Lucía; surprising C19 windmills. Panorama of the salt-marshes and the ocean.
WEDNESDAY: The fabulous cork-oak forests of the Atlantic, with Gibraltar and Morocco in the distance. Procession of the Three Kings at Medina Sidonia.
THURSDAY: Transfer to Málaga.
